With the “back to school” season upon us, I have been racking my brain for some quick and healthy snack ideas for my son. He is so busy when school starts (with various activities), that he needs a quick boost of energy before starting homework or working on projects. But even if you don’t have a child in school, you are probably always looking for healthy snack options that won’t spoil your little one’s lunch or dinner. Since apple picking season is almost here (and our taste buds are shifting towards fall flavors), I thought it’s the perfect time to share a low fat, low calorie, gluten free favorite using (what else?)…apples!
Apple Snack Wedges
* 2 apples
* 1 cup of Rice Chex
* 1 1/2 cup of organic brown sugar
* 2 tablespoons of low fat, natural peanut butter ( I prefer Teddie with Flax seed ) If you have a peanut allergy in your home try apple butter.
First, core the apples, cut into wedges wash and dry on a paper towel. Next, place brown sugar and Rice Chex in a bowl . Spread the apple wedges with peanut Â butter (or nut-free substitute) and then dip them in the sugar and cereal mixture (the peanut butter provides fabulous protein for hungry, tired kids). This recipe is perfect to get your children involved in cooking (plus, it’s super healthy for everyone, so you can share too!)
