If you are one of the garden-friendly few growing tomatoes in your yard, you might be finding that you are now bringing them to your neighbors, family, friends and coworkers. But if tomatoes are not plentiful in your garden, you can always check the local farmers market, or places like Costco which have a great fresh selection of produce. But if you are running out of ways to cook and prepare you tomatoes…look no further.
Egyptian Tomato Salad (adapted from Nigella Lawson)
* 3 tbsp of olive oil
* 1 clove of garlic (minced finely)
* 1 lemon
* 1 shallot (peeled)
* 5-6 tomatoes
* Sea salt ( 2 tsp)
Combine shallots, garlic and sea salt in a food processor until well mixed. Next, fill a pot with water, let it come to a boil, and then place the tomatoes in the boiling water for 5 minutes. Take the tomatoes out of the water and place in a bowl with cold water running into the bowl (let the tomatoes cool). Cut them into slices, and arrange them on a plate as you choose (I arranged them in a circle). Finally, add the mixture you already prepared to the top of each tomato, and top it off with extra virgin olive oil (and a bit more sea salt to taste). Enjoy!
