These no-bake “snack balls” are the perfect chewy treat for a healthy after dinner snack, a healthy alternative to pack in your childâ€™s lunch box, or a fantastic breakfast with fresh fruit. They are simple, easy to make, and can be given to your family without incorporating sugar or unhealthy sweeteners. This Makeover Momma original recipe is allergen-free*, but can be prepared with other kinds of cereal or fruit.
- 2 large bananas
- 1 cup (or more) of rice and berry cereal (like Erewhon brand).
- 1/4 cup of gluten-free rice syrup (like Lundburg Organic Sweet Dreams Brown Rice Syrup).
- 1/4 cup of shredded coconut (like â€œLetâ€™s Doâ€¦Organicâ€ finely shredded coconut).
Place the two ripe bananas in a large zip lock bag, and mash them with a flat object until smooth (like the underside of your measuring cup). Squeeze the mashed banana into a mixing bowl (like squeezing icing out of a bag), and pour in the shredded coconut and brown rice syrup. Mix thoroughly using a spoon (or clean hands), and add gluten-free brown rice cereal (add more, if the mixture needs more texture.)
Carefully scoop spoonfuls of mixture onto a flat surface and mold into small balls using your hands (they will feel soft, but will congeal overnight.)Â If they feel too soft, additional brown rice syrup may be added. Try making â€œtropical barsâ€ by spooning the contents into a flat pan instead.
Let refrigerate overnight, and wake up to healthy and sweet snack for you and your kids!
