    PB&J Snack Recipe– 5 Minute Food Fix

    For a 5 Minute Meal, try “PB & J Date Roll-Ups” for a fresh twist on the classic favorite. They make a fun and festive appetizer at a party or a wonderful on-the-go snack (that can be shared with your toddler on the go). Using dried dates, peanut butter, and organic fruit roll-ups, this recipe takes mere moments to assemble, and is like a healthy “date in a blanket”.

    Ingredients:

    8 (or more) dried and pitted organic dates.
    ¼ cup (roughly) of creamy gluten-free peanut butter (like JIF)
    Organic dried “fruit leather” roll-ups (FruitaBu Fruit Twists)

    Instructions:

    Take a dried pitted date, and split one side of the date open using a sharp knife (so that you can peel it apart like an envelope.) Carefully use a small spoon or toothpick to add a small amount of creamy peanut butter into the insides of the date.

    Next, take a 2 to 3″ segment of fruit leather or fruit roll up, and wrap around the outside of the date to hold it’s contents together. It will naturally stick together, sealing the dates into bite-size protein treats!

    Serves 1 (snack serving).
